Ingredients

  • Vegan phyllo dough - 6 sheets
  • Firm tofu - 200 grams
  • Nutritional yeast - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 3 tablespoons

Steps

  1. Preheat the oven to 200°C (390°F).
  2. In a bowl, crumble the firm tofu and add nutritional yeast, lemon juice, chopped parsley, chopped dill, salt, and black pepper. Mix until well combined to create the filling.
  3. Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with more olive oil.
  4. Place a generous amount of the tofu filling along one edge of the phyllo dough, then fold the edges over and roll it up tightly to form a log shape.
  5. Repeat the process with the remaining phyllo sheets and filling to make additional rolls.
  6. Arrange the böreks on a baking sheet lined with parchment paper and brush the tops with olive oil.
  7. Bake in the preheated oven for 20 minutes or until golden brown and crispy.
  8. Remove from the oven, let cool slightly, and serve warm.
