- Vegan phyllo dough - 6 sheets
- Firm tofu - 200 grams
- Nutritional yeast - 3 tablespoons
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Fresh dill - 1 tablespoon, chopped
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 3 tablespoons
Steps
- Preheat the oven to 200°C (390°F).
- In a bowl, crumble the firm tofu and add nutritional yeast, lemon juice, chopped parsley, chopped dill, salt, and black pepper. Mix until well combined to create the filling.
- Lay one sheet of phyllo dough on a clean surface and brush lightly with olive oil. Place another sheet on top and brush with more olive oil.
- Place a generous amount of the tofu filling along one edge of the phyllo dough, then fold the edges over and roll it up tightly to form a log shape.
- Repeat the process with the remaining phyllo sheets and filling to make additional rolls.
- Arrange the böreks on a baking sheet lined with parchment paper and brush the tops with olive oil.
- Bake in the preheated oven for 20 minutes or until golden brown and crispy.
- Remove from the oven, let cool slightly, and serve warm.
