Ingredients
- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Ground cumin - 1/4 teaspoon
- Whole wheat burger buns - 2
- Fresh spinach - 50g
- Tomato - 1 medium, sliced
- Red onion - 1/2 medium, thinly sliced
- Greek yogurt - 100g
- Lemon juice - 1 tablespoon
Steps
- Preheat a grill or grill pan over medium heat.
- Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for about 10 minutes to draw out moisture.
- Rinse the eggplant slices under cold water and pat dry with a paper towel.
- In a bowl, mix olive oil, black pepper, paprika, garlic powder, and ground cumin. Brush both sides of the eggplant slices with the mixture.
- Grill the eggplant slices for 4-5 minutes on each side until tender and grill marks appear.
- While the eggplant is grilling, mix Greek yogurt and lemon juice in a small bowl to create a tangy sauce.
- Toast the whole wheat burger buns on the grill for about 2 minutes until lightly browned.
- Assemble the burgers: spread the yogurt sauce on the bottom half of each bun, add fresh spinach, grilled eggplant, sliced tomato, and red onion, then top with the other half of the bun.
- Serve immediately while warm.
