Ingredients

  • Eggplant - 1 medium (about 250g)
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Ground cumin - 1/4 teaspoon
  • Whole wheat burger buns - 2
  • Fresh spinach - 50g
  • Tomato - 1 medium, sliced
  • Red onion - 1/2 medium, thinly sliced
  • Greek yogurt - 100g
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat a grill or grill pan over medium heat.
  2. Slice the eggplant into 1 cm thick rounds and sprinkle both sides with salt. Let them sit for about 10 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat dry with a paper towel.
  4. In a bowl, mix olive oil, black pepper, paprika, garlic powder, and ground cumin. Brush both sides of the eggplant slices with the mixture.
  5. Grill the eggplant slices for 4-5 minutes on each side until tender and grill marks appear.
  6. While the eggplant is grilling, mix Greek yogurt and lemon juice in a small bowl to create a tangy sauce.
  7. Toast the whole wheat burger buns on the grill for about 2 minutes until lightly browned.
  8. Assemble the burgers: spread the yogurt sauce on the bottom half of each bun, add fresh spinach, grilled eggplant, sliced tomato, and red onion, then top with the other half of the bun.
  9. Serve immediately while warm.
