Ingredients

  • Eggplant - 1 medium (about 250g)
  • Red bell pepper - 1 (about 150g)
  • Tomato - 1 medium (about 100g)
  • Garlic - 1 clove
  • Lemon juice - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the eggplant in half lengthwise and score the flesh with a knife in a diamond pattern. Place it on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt. Roast in the oven for about 25-30 minutes until soft and slightly charred.
  3. While the eggplant is roasting, chop the red bell pepper and tomato into small pieces. Mince the garlic.
  4. In a bowl, combine the chopped bell pepper, tomato, minced garlic, lemon juice, remaining olive oil, salt, and black pepper. Mix well.
  5. Once the eggplant is done, remove it from the oven and let it cool slightly. Scoop out the flesh and add it to the bowl with the vegetable mixture.
  6. Mix everything together until well combined. Garnish with chopped parsley before serving.
