Ingredients
- Eggplant - 1 medium (about 250g)
- Red bell pepper - 1 (about 150g)
- Tomato - 1 medium (about 100g)
- Garlic - 1 clove
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Cut the eggplant in half lengthwise and score the flesh with a knife in a diamond pattern. Place it on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt. Roast in the oven for about 25-30 minutes until soft and slightly charred.
- While the eggplant is roasting, chop the red bell pepper and tomato into small pieces. Mince the garlic.
- In a bowl, combine the chopped bell pepper, tomato, minced garlic, lemon juice, remaining olive oil, salt, and black pepper. Mix well.
- Once the eggplant is done, remove it from the oven and let it cool slightly. Scoop out the flesh and add it to the bowl with the vegetable mixture.
- Mix everything together until well combined. Garnish with chopped parsley before serving.
