Ingredients

  • Eggplant - 200 grams
  • Zucchini - 100 grams
  • All-purpose flour - 50 grams
  • Feta cheese - 50 grams, crumbled
  • Fresh parsley - 2 tablespoons, chopped
  • Fresh dill - 1 tablespoon, chopped
  • Egg - 1 large
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 3 tablespoons for frying

Steps

  1. Begin by washing the eggplant and zucchini. Grate both using a box grater and place them in a large mixing bowl.
  2. Sprinkle salt over the grated eggplant and zucchini and let them sit for about 10 minutes to release excess moisture. After 10 minutes, squeeze out the moisture using a clean kitchen towel.
  3. To the bowl with the drained vegetables, add crumbled feta cheese, chopped parsley, dill, minced garlic, and the egg. Mix well to combine.
  4. Gradually add the flour into the mixture and stir until everything is evenly incorporated. The mixture should be thick enough to hold its shape.
  5. In a non-stick skillet, heat 3 tablespoons of olive oil over medium heat. Once hot, drop spoonfuls of the mixture into the skillet, flattening them slightly with the back of the spoon.
  6. Fry the patties for about 3-4 minutes on each side, or until golden brown. Remove from the skillet and place on a plate lined with paper towels to absorb excess oil.
  7. Serve warm as an appetizer, optionally garnished with additional fresh herbs or a yogurt dip.
