Ingredients

  • Eggplant - 2 medium-sized
  • Ground lamb or beef - 250 grams

  • Red bell pepper - 1, diced
  • Parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. Preheat the grill or grill pan over medium heat.
  2. Slice the eggplants into 1-inch thick rounds and sprinkle with salt. Let them sit for 15 minutes to draw out moisture, then rinse and pat dry.
  3. In a mixing bowl, combine ground meat, chopped onion, minced garlic, diced red bell pepper, parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are incorporated.
  4. Shape the meat mixture into long, flat skewers, about 4-5 pieces per skewer.
  5. Brush eggplant slices with olive oil on both sides.
  6. Thread the meat skewers and eggplant slices onto the grill. Cook for 15-20 minutes, turning occasionally, until the meat is cooked through and the eggplant is tender and slightly charred.
  7. Remove from grill and let rest for a few minutes before serving.
