- Eggplant - 2 medium-sized
- Ground lamb or beef - 250 grams
- Onion - 1 medium, finely chopped

- Red bell pepper - 1, diced
- Parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- Preheat the grill or grill pan over medium heat.
- Slice the eggplants into 1-inch thick rounds and sprinkle with salt. Let them sit for 15 minutes to draw out moisture, then rinse and pat dry.
- In a mixing bowl, combine ground meat, chopped onion, minced garlic, diced red bell pepper, parsley, cumin, paprika, salt, and black pepper. Mix well until all ingredients are incorporated.
- Shape the meat mixture into long, flat skewers, about 4-5 pieces per skewer.
- Brush eggplant slices with olive oil on both sides.
- Thread the meat skewers and eggplant slices onto the grill. Cook for 15-20 minutes, turning occasionally, until the meat is cooked through and the eggplant is tender and slightly charred.
- Remove from grill and let rest for a few minutes before serving.
