Ingredients

  • Eggplant - 2 medium-sized
  • Ground lamb - 250 grams
  • Onion - 1 small, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 2 tablespoons, chopped
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Tomato - 1 medium, sliced
  • Green bell pepper - 1 medium, sliced
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. Preheat the grill or oven to medium-high heat.
  2. Slice the eggplants into 1 cm thick rounds and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
  3. In a mixing bowl, combine the ground lamb, chopped onion, minced garlic, parsley, cumin, paprika, salt, black pepper, olive oil, and lemon juice. Mix until well combined.
  4. Shape the lamb mixture into small patties or logs, about the size of the eggplant slices.
  5. Rinse the eggplant slices under cold water to remove excess salt and pat them dry with a paper towel.
  6. On each skewer, alternate between threading the lamb patties, eggplant slices, tomato slices, and green bell pepper slices.
  7. Place the skewers on the grill or in the oven. Cook for about 20-25 minutes, turning occasionally until the meat is cooked through and the vegetables are tender.
  8. Once cooked, remove from heat and let rest for a few minutes before serving.
