- Fresh parsley - 2 tablespoons, chopped
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Tomato - 1 medium, sliced
- Green bell pepper - 1 medium, sliced
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- Preheat the grill or oven to medium-high heat.
- Slice the eggplants into 1 cm thick rounds and sprinkle with salt. Let them sit for 10 minutes to draw out moisture.
- In a mixing bowl, combine the ground lamb, chopped onion, minced garlic, parsley, cumin, paprika, salt, black pepper, olive oil, and lemon juice. Mix until well combined.
- Shape the lamb mixture into small patties or logs, about the size of the eggplant slices.
- Rinse the eggplant slices under cold water to remove excess salt and pat them dry with a paper towel.
- On each skewer, alternate between threading the lamb patties, eggplant slices, tomato slices, and green bell pepper slices.
- Place the skewers on the grill or in the oven. Cook for about 20-25 minutes, turning occasionally until the meat is cooked through and the vegetables are tender.
- Once cooked, remove from heat and let rest for a few minutes before serving.
