- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- Preheat your grill or BBQ to medium-high heat.
- Wash and cut the eggplant into 2.5 cm cubes, the red bell pepper into 2.5 cm pieces, and the zucchini into 1 cm thick slices.
- In a large bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create the marinade.
- Add the eggplant, red bell pepper, zucchini, and cherry tomatoes to the marinade, tossing to coat evenly. Let it marinate for at least 10 minutes.
- Thread the marinated vegetables onto skewers, alternating between eggplant, bell pepper, zucchini, and cherry tomatoes.
- Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and have grill marks.
- Once cooked, remove from the grill and sprinkle with fresh parsley before serving.
