Ingredients

  • Eggplant - 400 grams

  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. Wash and cut the eggplant into 2.5 cm cubes, the red bell pepper into 2.5 cm pieces, and the zucchini into 1 cm thick slices.
  3. In a large bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create the marinade.
  4. Add the eggplant, red bell pepper, zucchini, and cherry tomatoes to the marinade, tossing to coat evenly. Let it marinate for at least 10 minutes.
  5. Thread the marinated vegetables onto skewers, alternating between eggplant, bell pepper, zucchini, and cherry tomatoes.
  6. Place the skewers on the preheated grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and have grill marks.
  7. Once cooked, remove from the grill and sprinkle with fresh parsley before serving.
