Ingredients

  • Long-grain rice - 150 grams
  • Potatoes - 200 grams, peeled and diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 400 ml
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric - 1/2 teaspoon
  • Bay leaf - 1
  • Fresh parsley - for garnish

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and diced potatoes to the saucepan, and cook for an additional 5 minutes, stirring occasionally.
  4. Stir in the soaked rice, salt, black pepper, turmeric, and bay leaf, mixing well to combine all the ingredients.
  5. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice and potatoes are tender and the liquid is absorbed.
  6. Remove the saucepan from heat and let it sit covered for an additional 5 minutes to allow the flavors to meld.
  7. Fluff the pilav with a fork and garnish with fresh parsley before serving.
