- Long-grain rice - 150 grams
- Potatoes - 200 grams, peeled and diced

- Vegetable broth - 400 ml
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric - 1/2 teaspoon
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then soak it in water for about 15 minutes.
- In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced potatoes to the saucepan, and cook for an additional 5 minutes, stirring occasionally.
- Stir in the soaked rice, salt, black pepper, turmeric, and bay leaf, mixing well to combine all the ingredients.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes or until the rice and potatoes are tender and the liquid is absorbed.
- Remove the saucepan from heat and let it sit covered for an additional 5 minutes to allow the flavors to meld.
- Fluff the pilav with a fork and garnish with fresh parsley before serving.
