Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Dry yeast - 7 grams
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Potatoes - 300 grams, peeled and diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, mix the warm water and dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine the all-purpose flour and salt. Add the yeast mixture and olive oil, and knead to form a soft dough.
  3. Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes.
  4. While the dough is rising, cook the diced potatoes in boiling water for about 10 minutes until tender. Drain and set aside.
  5. In a skillet, heat a little olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
  6. Add the cooked potatoes to the skillet, along with paprika, black pepper, chopped parsley, and lemon juice. Mix well and cook for another 5 minutes. Remove from heat and let it cool slightly.
  7. Preheat your oven to 220°C (428°F).
  8. Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape on a floured surface.
  9. Place the potato filling in the center of each oval, leaving a border around the edges. Fold the edges over to form a boat shape, pinching to seal.
  10. Transfer the pide to a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
  11. Remove from the oven and let cool slightly before serving.
