Ingredients
- All-purpose flour - 250 grams
- Warm water - 150 ml
- Dry yeast - 7 grams
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Potatoes - 300 grams, peeled and diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- In a bowl, mix the warm water and dry yeast. Let it sit for 5 minutes until frothy.
- In a large mixing bowl, combine the all-purpose flour and salt. Add the yeast mixture and olive oil, and knead to form a soft dough.
- Cover the dough with a damp cloth and let it rise in a warm place for 30 minutes.
- While the dough is rising, cook the diced potatoes in boiling water for about 10 minutes until tender. Drain and set aside.
- In a skillet, heat a little olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for another minute.
- Add the cooked potatoes to the skillet, along with paprika, black pepper, chopped parsley, and lemon juice. Mix well and cook for another 5 minutes. Remove from heat and let it cool slightly.
- Preheat your oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal portions. Roll each portion into an oval shape on a floured surface.
- Place the potato filling in the center of each oval, leaving a border around the edges. Fold the edges over to form a boat shape, pinching to seal.
- Transfer the pide to a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
- Remove from the oven and let cool slightly before serving.
