Ingredients

  • 2 medium potatoes - 300 grams
  • 4 large eggs - 240 grams
  • 1 small onion - 100 grams
  • 2 tablespoons olive oil - 30 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Peel and dice the potatoes into small cubes, then rinse them under cold water.
  2. In a medium saucepan, add the diced potatoes and cover with water. Bring to a boil and cook for 5-7 minutes until slightly tender. Drain and set aside.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  4. Add the cooked potatoes to the skillet, season with salt and black pepper, and cook for another 5-6 minutes, stirring occasionally until the potatoes are golden brown.
  5. In a bowl, whisk the eggs together and season with a pinch of salt and pepper.
  6. Pour the egg mixture over the cooked potatoes and onions in the skillet. Reduce heat to low and cover with a lid.
  7. Cook for about 5-7 minutes or until the eggs are set and the bottom is golden brown. You can optionally flip the omelet using a plate for a more even cook.
  8. Once cooked, sprinkle with fresh parsley and serve warm.
