Ingredients

  • All-purpose flour - 200 grams
  • Water - 100 milliliters
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon
  • Potatoes - 250 grams
  • Onion - 1 small, finely chopped
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a large bowl, mix the all-purpose flour and salt. Gradually add water and 1 tablespoon of olive oil, kneading until you have a smooth dough. Cover with a damp cloth and let it rest for 15 minutes.
  2. Peel and chop the potatoes into small cubes. Boil them in salted water for about 10-15 minutes until tender. Drain and mash slightly.
  3. In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent. Stir in the boiled potatoes, paprika, black pepper, and chopped parsley, mixing well. Remove from heat and let the filling cool slightly.
  4. Divide the rested dough into 2 equal portions. Roll each portion into a thin circle, about 20 cm in diameter.
  5. Place half of the potato filling on one half of each dough circle, leaving a border around the edge. Fold the other half of the dough over the filling and press the edges to seal.
  6. In a clean skillet over medium heat, cook each gözleme for about 3-4 minutes per side, or until golden brown and crispy. Add more olive oil if necessary to prevent sticking.
  7. Remove from the skillet and let cool for a moment before cutting into wedges. Serve warm.
