  • Dried mint - 1 teaspoon
  • Red pepper flakes - 1/2 teaspoon (optional)

Steps

  1. Boil the diced potatoes in salted water for about 15 minutes or until tender. Drain and mash them lightly.
  2. In a bowl, combine the flour, mashed potatoes, salt, and egg. Mix until a dough forms, adding water as needed to achieve a smooth consistency.
  3. Knead the dough on a floured surface for about 5 minutes until elastic. Cover with a cloth and let it rest for 15 minutes.
  4. Roll out the dough into a thin sheet (about 1-2 mm thick) and cut it into small squares or strips (about 2 cm).
  5. In a large pot, bring water to a boil and add the pasta. Cook for about 5-7 minutes until they float to the surface and are tender. Drain and set aside.
  6. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until golden brown.
  7. Add the cooked pasta to the skillet, along with black pepper, dried mint, and red pepper flakes (if using). Toss everything together for 2-3 minutes to combine well.
  8. Serve hot, garnished with fresh parsley if desired.
