Steps
- Boil the diced potatoes in salted water for about 15 minutes or until tender. Drain and mash them lightly.
- In a bowl, combine the flour, mashed potatoes, salt, and egg. Mix until a dough forms, adding water as needed to achieve a smooth consistency.
- Knead the dough on a floured surface for about 5 minutes until elastic. Cover with a cloth and let it rest for 15 minutes.
- Roll out the dough into a thin sheet (about 1-2 mm thick) and cut it into small squares or strips (about 2 cm).
- In a large pot, bring water to a boil and add the pasta. Cook for about 5-7 minutes until they float to the surface and are tender. Drain and set aside.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until golden brown.
- Add the cooked pasta to the skillet, along with black pepper, dried mint, and red pepper flakes (if using). Toss everything together for 2-3 minutes to combine well.
- Serve hot, garnished with fresh parsley if desired.
