  • Beef tenderloin - 200 grams
  • Salt - 20 grams
  • Cracked black pepper - 5 grams
  • Crushed garlic - 2 cloves
  • Fenugreek seeds - 5 grams
  • Coriander - 5 grams
  • Paprika - 5 grams
  • Olive oil - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Trim the beef tenderloin of any excess fat and sinew, then cut it into thin slices.
  2. In a bowl, mix the salt, cracked black pepper, crushed garlic, fenugreek seeds, coriander, and paprika to create a spice blend.
  3. Rub the spice blend generously over the beef slices, ensuring they are evenly coated.
  4. Place the seasoned beef in a shallow dish and cover with plastic wrap. Refrigerate for at least 24 hours to cure.
  5. After curing, remove the beef from the refrigerator and rinse off the spice mixture under cold water. Pat dry with paper towels.
  6. Heat olive oil in a skillet over medium heat. Add the beef slices and cook for about 3-4 minutes on each side, or until browned and cooked to your liking.
  7. Remove from heat and let rest for a few minutes. Slice the beef thinly for serving.
  8. Garnish with fresh parsley and serve on a platter with bread, olives, and cheese.
