- Tomato - 1 medium, diced
- Bell pepper - 1 medium, sliced
- Lemon juice - 2 tablespoons
- Dill - 1 tablespoon, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 100 milliliters
Steps
- In a large skillet, heat the olive oil over medium heat and sauté the sliced onion and minced garlic until softened, about 3-4 minutes.
- Add the diced tomato and sliced bell pepper to the skillet, cooking for an additional 3-4 minutes until the vegetables are slightly softened.
- Season the vegetable mixture with salt, black pepper, and chopped dill, stirring well to combine.
- Place the mackerel fillets on top of the vegetable mixture in the skillet, then drizzle with lemon juice.
- Pour the water into the skillet, cover with a lid, and let it steam for 15-20 minutes, or until the mackerel is cooked through and flakes easily.
- Serve hot, garnished with additional dill if desired.
