  • Paprika - 1/2 teaspoon
  • Vegetable broth - 400 ml
  • Fresh dill - 2 tablespoons, chopped (optional)

Steps

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the minced garlic and sauté for about 1 minute until fragrant.
  3. Stir in the sliced leeks and diced carrots, cooking for about 5 minutes until they begin to soften.
  4. Add the diced potato and chopped tomatoes, stirring well to combine.
  5. Season with salt, black pepper, and paprika, mixing everything together.
  6. Pour in the vegetable broth and bring to a gentle boil.
  7. Reduce the heat, cover the pot, and let it simmer for about 25 minutes or until the vegetables are tender.
  8. If using, stir in the fresh dill just before serving.
