- Leeks - 2 medium, sliced
- Long-grain rice - 150 grams (3/4 cup)
- Olive oil - 3 tablespoons
- Onion - 1 small, finely chopped
- Carrot - 1 medium, grated
- Vegetable broth - 400 ml (1 2/3 cups)
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Dill - 1 tablespoon, chopped (optional)
- Lemon juice - 1 tablespoon (optional)
Steps
- Rinse the rice under cold water until the water runs clear, then soak it in warm water for about 15 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the sliced leeks and grated carrot to the pot, stirring occasionally, and cook for another 5-6 minutes until the leeks are soft.
- Drain the soaked rice and add it to the pot, stirring well to combine with the vegetables.
- Pour in the vegetable broth, and season with salt and black pepper. Bring to a boil.
- Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is fully cooked and the liquid is absorbed.
- Turn off the heat and let the dish sit covered for an additional 5 minutes to steam.
- Fluff the rice with a fork, add chopped dill and lemon juice if desired, and serve warm.
