Ingredients

  • Leeks - 2 medium, sliced
  • Long-grain rice - 150 grams (3/4 cup)
  • Olive oil - 3 tablespoons
  • Onion - 1 small, finely chopped
  • Carrot - 1 medium, grated
  • Vegetable broth - 400 ml (1 2/3 cups)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Dill - 1 tablespoon, chopped (optional)
  • Lemon juice - 1 tablespoon (optional)

Steps

  1. Rinse the rice under cold water until the water runs clear, then soak it in warm water for about 15 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the sliced leeks and grated carrot to the pot, stirring occasionally, and cook for another 5-6 minutes until the leeks are soft.
  4. Drain the soaked rice and add it to the pot, stirring well to combine with the vegetables.
  5. Pour in the vegetable broth, and season with salt and black pepper. Bring to a boil.
  6. Once boiling, reduce the heat to low, cover the pot, and simmer for 15 minutes or until the rice is fully cooked and the liquid is absorbed.
  7. Turn off the heat and let the dish sit covered for an additional 5 minutes to steam.
  8. Fluff the rice with a fork, add chopped dill and lemon juice if desired, and serve warm.
