Ingredients

  • Leeks - 300 grams (about 2 medium leeks)
  • Carrots - 100 grams (1 medium carrot)
  • Potato - 150 grams (1 medium potato)
  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - 1 tablespoon (chopped)

Steps

  1. Clean and slice the leeks, carrots, and potato into small pieces.
  2. In a pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add the sliced leeks and carrots to the pot and sauté for 5-7 minutes until softened.
  4. Add the minced garlic and sauté for an additional minute until fragrant.
  5. Stir in the diced potato and vegetable broth, then bring the mixture to a boil.
  6. Reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
  7. Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
  8. Stir in the lemon juice, and season with salt and black pepper to taste.
  9. Serve hot, garnished with fresh dill.
