- Leeks - 300 grams (about 2 medium leeks)

- Potato - 150 grams (1 medium potato)

- Olive oil - 2 tablespoons
- Vegetable broth - 500 milliliters
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - 1 tablespoon (chopped)
Steps
- Clean and slice the leeks, carrots, and potato into small pieces.
- In a pot, heat 2 tablespoons of olive oil over medium heat.
- Add the sliced leeks and carrots to the pot and sauté for 5-7 minutes until softened.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the diced potato and vegetable broth, then bring the mixture to a boil.
- Reduce the heat and let it simmer for about 15-20 minutes, or until the potatoes are tender.
- Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
- Stir in the lemon juice, and season with salt and black pepper to taste.
- Serve hot, garnished with fresh dill.
