Ingredients

  • Pasta (spaghetti or fettuccine) - 200 grams
  • Leeks - 2 medium, cleaned and sliced
  • Garlic - 3 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 250 ml
  • Fresh lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh dill - 2 tablespoons, chopped

Steps

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and sauté for about 5 minutes until they begin to soften.
  3. Add the minced garlic to the skillet and sauté for an additional 2 minutes until fragrant.
  4. Pour in the vegetable broth and bring to a simmer. Cook for 5-7 minutes until the leeks are tender.
  5. Stir in the cooked pasta, lemon juice, salt, and black pepper. Toss well to combine and heat through for about 2 minutes.
  6. Remove from heat, stir in the chopped dill, and serve immediately.
