- Pasta (spaghetti or fettuccine) - 200 grams
- Leeks - 2 medium, cleaned and sliced
- Garlic - 3 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 250 ml
- Fresh lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh dill - 2 tablespoons, chopped
Steps
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the sliced leeks and sauté for about 5 minutes until they begin to soften.
- Add the minced garlic to the skillet and sauté for an additional 2 minutes until fragrant.
- Pour in the vegetable broth and bring to a simmer. Cook for 5-7 minutes until the leeks are tender.
- Stir in the cooked pasta, lemon juice, salt, and black pepper. Toss well to combine and heat through for about 2 minutes.
- Remove from heat, stir in the chopped dill, and serve immediately.
