Ingredients

  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, sliced into thick rounds
  • Mushrooms - 200 grams, whole or halved
  • Cherry tomatoes - 200 grams
  • Red onion - 1 medium, cut into wedges
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)

Steps

  1. In a large bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to make the marinade.
  2. Add the diced bell pepper, sliced zucchini, mushrooms, cherry tomatoes, and red onion to the bowl, tossing to coat the vegetables evenly with the marinade.
  3. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes.
  4. Preheat the grill or grill pan over medium-high heat.
  5. Thread the marinated vegetables onto the skewers alternately, making sure to leave some space between each piece.
  6. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
  7. Remove from the grill and let cool for a couple of minutes before serving.
