- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, sliced into thick rounds
- Mushrooms - 200 grams, whole or halved
- Cherry tomatoes - 200 grams
- Red onion - 1 medium, cut into wedges
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Skewers - 4 (if using wooden skewers, soak in water for 30 minutes)
Steps
- In a large bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to make the marinade.
- Add the diced bell pepper, sliced zucchini, mushrooms, cherry tomatoes, and red onion to the bowl, tossing to coat the vegetables evenly with the marinade.
- Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 15 minutes.
- Preheat the grill or grill pan over medium-high heat.
- Thread the marinated vegetables onto the skewers alternately, making sure to leave some space between each piece.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the vegetables are tender and slightly charred.
- Remove from the grill and let cool for a couple of minutes before serving.
