- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Red bell pepper - 1 medium, diced
- Tomato - 1 medium, diced
- Vegetable broth - 500 ml
- Lentils (red or green) - 100 grams, rinsed
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, celery, and red bell pepper to the pot. Sauté for another 5 minutes until the vegetables are slightly softened.
- Stir in the diced tomato, rinsed lentils, cumin, paprika, salt, and black pepper. Mix well to combine all the ingredients.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the lentils are tender.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
