Ingredients

  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Red bell pepper - 1 medium, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Lentils (red or green) - 100 grams, rinsed
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, celery, and red bell pepper to the pot. Sauté for another 5 minutes until the vegetables are slightly softened.
  3. Stir in the diced tomato, rinsed lentils, cumin, paprika, salt, and black pepper. Mix well to combine all the ingredients.
  4. Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 20 minutes, or until the lentils are tender.
  5. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
