Ingredients
- Long-grain rice - 1 cup (200g)
- Chickpeas (canned or cooked) - 1 cup (240g)
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 2 cups (480ml)
- Olive oil - 2 tablespoons (30ml)
- Salt - 1 teaspoon (5g)
- Black pepper - 1/2 teaspoon (2g)
- Turmeric powder - 1/2 teaspoon (1g)
- Cumin powder - 1/2 teaspoon (1g)
- Bay leaf - 1
- Fresh parsley - for garnish
Steps
- Rinse the long-grain rice under cold water until the water runs clear, then drain and set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the cumin, turmeric, black pepper, and salt, cooking for another minute to release the spices' flavors.
- Add the rinsed rice to the pot, stirring to coat the rice in the onion and spice mixture.
- Pour in the vegetable broth and add the bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- After 15 minutes, add the chickpeas on top of the rice without stirring. Cover and cook for another 5 minutes.
- Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, discarding the bay leaf.
- Serve warm, garnished with fresh parsley.
