Ingredients

  • Long-grain rice - 1 cup (200g)
  • Chickpeas (canned or cooked) - 1 cup (240g)
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 2 cups (480ml)
  • Olive oil - 2 tablespoons (30ml)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Turmeric powder - 1/2 teaspoon (1g)
  • Cumin powder - 1/2 teaspoon (1g)
  • Bay leaf - 1
  • Fresh parsley - for garnish

Steps

  1. Rinse the long-grain rice under cold water until the water runs clear, then drain and set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the cumin, turmeric, black pepper, and salt, cooking for another minute to release the spices' flavors.
  5. Add the rinsed rice to the pot, stirring to coat the rice in the onion and spice mixture.
  6. Pour in the vegetable broth and add the bay leaf. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  7. After 15 minutes, add the chickpeas on top of the rice without stirring. Cover and cook for another 5 minutes.
  8. Remove from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork, discarding the bay leaf.
  9. Serve warm, garnished with fresh parsley.
