Ingredients

  • Chickpeas (cooked) - 240 grams
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 1 medium
  • Carrot (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Tomato paste - 1 tablespoon
  • Vegetable broth - 500 ml
  • Cumin (ground) - 1 teaspoon
  • Paprika (smoked) - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - for garnish
  • Lemon wedges - for serving

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and carrot, and sauté until the onion is translucent, about 5 minutes.
  2. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  3. Stir in the tomato paste, cumin, and smoked paprika, cooking for another minute to combine the flavors.
  4. Add the cooked chickpeas and vegetable broth to the pot. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes.
  5. Using an immersion blender, blend the soup until you reach your desired consistency, leaving some chickpeas whole for texture. If you don't have an immersion blender, you can carefully transfer half of the soup to a blender, blend, and return it to the pot.
  6. Season with salt and black pepper to taste, and simmer for another 5 minutes.
  7. Serve hot, garnished with fresh parsley and lemon wedges on the side.
