- Portobello mushrooms - 2 large
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Whole grain pita bread - 2 pieces
- Tomato - 1 medium, sliced
- Cucumber - 1 small, sliced
- Red onion - 1/2 small, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Tahini - 2 tablespoons
- Water - 1 tablespoon
Steps
- Preheat your grill or grill pan over medium-high heat.
- In a bowl, combine olive oil, minced garlic, paprika, cumin, salt, black pepper, and lemon juice to make a marinade.
- Remove the stems from the portobello mushrooms and brush the marinade generously on both sides of the mushrooms.
- Let the mushrooms marinate for at least 10 minutes.
- While the mushrooms are marinating, prepare the tahini sauce by mixing tahini and water in a small bowl until smooth; adjust the consistency as needed.
- Grill the marinated mushrooms for about 5-7 minutes on each side, or until tender and slightly charred.
- In the meantime, prepare the vegetables by slicing the tomato, cucumber, and red onion.
- Once the mushrooms are cooked, remove them from the grill and slice them into strips.
- To assemble, place the grilled mushroom strips inside the pita bread, and top with sliced tomatoes, cucumbers, red onions, and chopped parsley.
- Drizzle the tahini sauce over the top, fold the pita, and serve immediately.
