Ingredients

  • Portobello mushrooms - 2 large
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Paprika - 1 teaspoon
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Whole grain pita bread - 2 pieces
  • Tomato - 1 medium, sliced
  • Cucumber - 1 small, sliced
  • Red onion - 1/2 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Tahini - 2 tablespoons
  • Water - 1 tablespoon

Steps

  1. Preheat your grill or grill pan over medium-high heat.
  2. In a bowl, combine olive oil, minced garlic, paprika, cumin, salt, black pepper, and lemon juice to make a marinade.
  3. Remove the stems from the portobello mushrooms and brush the marinade generously on both sides of the mushrooms.
  4. Let the mushrooms marinate for at least 10 minutes.
  5. While the mushrooms are marinating, prepare the tahini sauce by mixing tahini and water in a small bowl until smooth; adjust the consistency as needed.
  6. Grill the marinated mushrooms for about 5-7 minutes on each side, or until tender and slightly charred.
  7. In the meantime, prepare the vegetables by slicing the tomato, cucumber, and red onion.
  8. Once the mushrooms are cooked, remove them from the grill and slice them into strips.
  9. To assemble, place the grilled mushroom strips inside the pita bread, and top with sliced tomatoes, cucumbers, red onions, and chopped parsley.
  10. Drizzle the tahini sauce over the top, fold the pita, and serve immediately.
