Ingredients
- Fresh mussels - 12 pieces
- Rice - 100 grams
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Parsley - 2 tablespoons, finely chopped
- Tomato - 1 medium, diced
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Water - 200 milliliters
- Pine nuts - 1 tablespoon, toasted
- Dried mint - 1/2 teaspoon
Steps
- Rinse the mussels under cold water and scrub the shells to remove any debris. Discard any that are open or damaged.
- In a saucepan, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent.
- Add the rice to the saucepan and stir for 2-3 minutes. Then add the diced tomato, parsley, pine nuts, dried mint, salt, and black pepper.
- Pour in the water and bring to a boil. Reduce heat to low, cover, and simmer for about 15 minutes or until the rice is cooked and the water is absorbed. Remove from heat and let it cool slightly.
- Stuff each mussel shell with the rice mixture, pressing down gently to fill them well. Close the shells carefully.
- In a large pot, arrange the stuffed mussels tightly together. Drizzle with the remaining olive oil and lemon juice, and add a splash of water to the bottom of the pot.
- Cover the pot and steam the mussels over medium heat for about 20 minutes until they open and are heated through.
- Serve warm, garnished with additional parsley and lemon wedges, if desired.
