Ingredients

  • Basmati rice - 150 grams
  • Water - 400 milliliters
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Red bell pepper - 1 medium, diced
  • Green bell pepper - 1 medium, diced
  • Carrot - 1 medium, diced
  • Tomato - 1 medium, diced
  • Bay leaf - 1
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes before draining.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced red and green bell peppers, and carrot to the pot. Sauté for about 5–7 minutes until the vegetables are softened.
  5. Add the diced tomato, bay leaf, salt, black pepper, and paprika. Stir well and cook for another 3 minutes.
  6. Pour in the 400 milliliters of water and bring to a boil.
  7. Once boiling, add the drained rice to the pot. Stir gently, then reduce the heat to low and cover with a lid.
  8. Cook for 12-15 minutes, or until the rice is tender and the water is absorbed. Remove from heat and let it sit covered for 5 minutes.
  9. Fluff the rice with a fork, remove the bay leaf, and stir in the chopped parsley before serving.
