Ingredients

  • Basmati rice - 150 grams
  • Vegetable broth - 400 ml
  • Onion - 1 medium, finely chopped
  • Carrot - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Green peas - 100 grams (fresh or frozen)
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Tomato paste - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic, diced carrot, and diced red bell pepper. Cook for another 5 minutes until the vegetables begin to soften.
  4. Add the tomato paste, cumin, and paprika to the pot, stirring well to combine with the vegetables.
  5. Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the vegetable mixture.
  6. Pour in the vegetable broth and add the green peas. Season with salt and black pepper to taste.
  7. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  8. Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
  9. Garnish with fresh parsley and serve warm.
