- Basmati rice - 150 grams
- Vegetable broth - 400 ml
- Onion - 1 medium, finely chopped
- Carrot - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Green peas - 100 grams (fresh or frozen)
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Tomato paste - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 20 minutes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic, diced carrot, and diced red bell pepper. Cook for another 5 minutes until the vegetables begin to soften.
- Add the tomato paste, cumin, and paprika to the pot, stirring well to combine with the vegetables.
- Drain the soaked rice and add it to the pot, stirring gently to coat the rice with the vegetable mixture.
- Pour in the vegetable broth and add the green peas. Season with salt and black pepper to taste.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
- Once cooked, remove from heat and let it sit covered for an additional 5 minutes. Fluff the rice with a fork before serving.
- Garnish with fresh parsley and serve warm.
