Ingredients
- Red lentils - 150 grams
- Cucumber - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Red onion - 1 small, finely chopped
- Bell pepper (red or yellow) - 1, diced
- Parsley - 30 grams, finely chopped
- Mint leaves - 15 grams, finely chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Pomegranate seeds - 50 grams (for garnish)
Steps
- Rinse the red lentils under cold water until the water runs clear, then place them in a pot with 500ml of water and bring to a boil.
- Reduce the heat and simmer for about 15-20 minutes, or until the lentils are soft but still hold their shape. Drain any excess water and let cool.
- In a large mixing bowl, combine the diced cucumber, halved cherry tomatoes, finely chopped red onion, diced bell pepper, parsley, and mint leaves.
- Add the cooled lentils to the vegetable mixture.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper.
- Pour the dressing over the salad and toss gently to combine all ingredients evenly.
- Serve the salad chilled or at room temperature, garnished with pomegranate seeds.
