Ingredients

  • Red lentils - 100 grams
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Vegetable broth - 750 milliliters
  • Tomato paste - 1 tablespoon
  • Cumin - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Lemon - 1, juiced
  • Fresh parsley - for garnish

Steps

  1. Heat olive oil in a medium pot over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent, about 5 minutes.
  3. Stir in diced carrot and potato, cooking for another 5 minutes.
  4. Add the red lentils, vegetable broth, tomato paste, cumin, salt, and black pepper.
  5. Bring to a boil, then reduce the heat and let it simmer for 20 minutes, or until the lentils and vegetables are tender.
  6. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half.
  7. Stir in lemon juice and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh parsley.
