- Red lentils - 100 grams
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Vegetable broth - 750 milliliters
- Tomato paste - 1 tablespoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Lemon - 1, juiced
- Fresh parsley - for garnish
Steps
- Heat olive oil in a medium pot over medium heat.
- Add chopped onion and minced garlic, sauté until translucent, about 5 minutes.
- Stir in diced carrot and potato, cooking for another 5 minutes.
- Add the red lentils, vegetable broth, tomato paste, cumin, salt, and black pepper.
- Bring to a boil, then reduce the heat and let it simmer for 20 minutes, or until the lentils and vegetables are tender.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half.
- Stir in lemon juice and adjust seasoning if necessary.
- Serve hot, garnished with fresh parsley.
