Ingredients

  • Red lentils - 100 grams
  • Fine bulgur - 50 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Tomato paste - 2 tablespoons
  • Olive oil - 3 tablespoons
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley - 30 grams, chopped
  • Green onions - 2, finely chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Rinse the red lentils under cold water until the water runs clear. In a pot, combine the lentils with 300 ml of water and bring to a boil. Reduce the heat and simmer for about 15 minutes, or until the lentils are soft and have absorbed most of the water.
  2. Once the lentils are cooked, remove them from heat and let them cool slightly. In a separate bowl, combine the fine bulgur with the cooked lentils while they are still warm. Mix well and let it sit for about 10 minutes to allow the bulgur to absorb moisture.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Add the minced garlic, cumin, paprika, salt, and black pepper, and cook for another 2 minutes, stirring frequently.
  4. Add the sautéed onion mixture to the lentils and bulgur mixture. Stir in the parsley, green onions, and lemon juice until everything is combined evenly.
  5. Using your hands, shape the mixture into small patties or balls, about the size of a golf ball. Flatten them slightly to form a traditional köfte shape.
  6. Serve the Mercimek Köftesi on a platter, garnished with additional parsley and lemon wedges if desired.
