Ingredients
- Milk - 500 ml
- Sugar - 100 g
- Salep (ground orchid tuber) - 2 tsp
- Mastic gum (crushed) - 1/2 tsp
- Heavy cream - 250 ml
- Vanilla extract - 1 tsp
- Salt - a pinch
Steps
- In a saucepan, combine the milk, sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves and the mixture is warm but not boiling.
- In a small bowl, mix the salep and crushed mastic with a few tablespoons of the warm milk mixture to create a smooth paste.
- Gradually whisk the salep mixture back into the saucepan with the warm milk, stirring constantly to prevent lumps.
- Continue to cook the mixture over low heat, stirring frequently, until it thickens (about 10-15 minutes). Remove from heat and let it cool slightly.
- In a separate bowl, whip the heavy cream until soft peaks form, then fold it gently into the cooled milk mixture along with the vanilla extract.
- Transfer the mixture to a shallow container and freeze for at least 4 hours, or until solid.
- Once frozen, remove the ice cream from the freezer and let it sit at room temperature for about 5-10 minutes to soften slightly before serving.
- Scoop the Maraş Dondurması into bowls, using a spatula or ice cream scoop, and enjoy the unique stretchy texture.
