Ingredients

  • Milk - 500 ml
  • Sugar - 100 g
  • Salep (ground orchid tuber) - 2 tsp
  • Mastic gum (crushed) - 1/2 tsp
  • Heavy cream - 250 ml
  • Vanilla extract - 1 tsp
  • Salt - a pinch

Steps

  1. In a saucepan, combine the milk, sugar, and a pinch of salt. Heat over medium heat until the sugar dissolves and the mixture is warm but not boiling.
  2. In a small bowl, mix the salep and crushed mastic with a few tablespoons of the warm milk mixture to create a smooth paste.
  3. Gradually whisk the salep mixture back into the saucepan with the warm milk, stirring constantly to prevent lumps.
  4. Continue to cook the mixture over low heat, stirring frequently, until it thickens (about 10-15 minutes). Remove from heat and let it cool slightly.
  5. In a separate bowl, whip the heavy cream until soft peaks form, then fold it gently into the cooled milk mixture along with the vanilla extract.
  6. Transfer the mixture to a shallow container and freeze for at least 4 hours, or until solid.
  7. Once frozen, remove the ice cream from the freezer and let it sit at room temperature for about 5-10 minutes to soften slightly before serving.
  8. Scoop the Maraş Dondurması into bowls, using a spatula or ice cream scoop, and enjoy the unique stretchy texture.
