Ingredients

  • All-purpose flour - 200 grams
  • Active dry yeast - 5 grams
  • Warm water - 100 milliliters
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Mushrooms (sliced) - 150 grams
  • Red bell pepper (finely chopped) - 1/2
  • Red onion (finely chopped) - 1 small
  • Garlic (minced) - 2 cloves
  • Tomato paste - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons
  • Lemon juice - 1 tablespoon

Steps

  1. In a bowl, combine warm water and active dry yeast. Let it sit for 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Add the yeast mixture and olive oil. Knead until a smooth dough forms, about 5-7 minutes. Cover and let it rise in a warm place for 30 minutes.
  3. While the dough is rising, heat a skillet over medium heat. Add a splash of olive oil and sauté the red onion and garlic until translucent.
  4. Add the sliced mushrooms and red bell pepper to the skillet. Cook for about 5-7 minutes until tender. Stir in tomato paste, oregano, black pepper, and cook for another 2 minutes. Remove from heat and stir in parsley and lemon juice.
  5. Preheat the oven to 220°C (428°F).
  6. Once the dough has risen, roll it out into an oval shape on a floured surface, about 1/2 cm thick.
  7. Transfer the rolled dough onto a baking sheet lined with parchment paper. Spoon the mushroom mixture onto the center, leaving a border around the edges.
  8. Fold the edges of the dough over the filling to create a boat shape, pinching the ends to seal.
  9. Bake in the preheated oven for 15-20 minutes, or until the crust is golden brown.
  10. Remove from the oven, let cool slightly, and slice to serve.
