Ingredients

  • Mushrooms (button or cremini) - 250 grams, sliced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Potato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Coconut milk - 200 ml
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lemon juice - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic, diced carrot, and potato, cooking for another 5 minutes.
  4. Add the sliced mushrooms and cook until they are softened, about 5 minutes.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat and add the coconut milk, thyme, salt, and black pepper.
  7. Simmer for 10-15 minutes until the vegetables are tender.
  8. Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
  9. Stir in the lemon juice and adjust seasoning if needed.
  10. Serve hot, garnished with fresh parsley.
