Ingredients
- Mushrooms (button or cremini) - 250 grams, sliced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Potato - 1 medium, diced
- Vegetable broth - 500 ml
- Coconut milk - 200 ml
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté for about 5 minutes until translucent.
- Stir in the minced garlic, diced carrot, and potato, cooking for another 5 minutes.
- Add the sliced mushrooms and cook until they are softened, about 5 minutes.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat and add the coconut milk, thyme, salt, and black pepper.
- Simmer for 10-15 minutes until the vegetables are tender.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Stir in the lemon juice and adjust seasoning if needed.
- Serve hot, garnished with fresh parsley.
