- Portobello mushrooms - 250 grams
- Bell pepper (red) - 1 medium, cut into chunks
- Zucchini - 1 medium, sliced into thick rounds
- Red onion - 1 medium, cut into wedges
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic (minced) - 2 cloves
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - ½ teaspoon
- Skewers (soaked if wooden) - 4
Steps
- In a bowl, combine olive oil, lemon juice, minced garlic, paprika, cumin, salt, and black pepper to create a marinade.
- Clean the Portobello mushrooms and slice them into thick pieces. Add them to the marinade and let them sit for at least 10 minutes.
- While the mushrooms marinate, prepare the bell pepper, zucchini, and red onion, adding them to the marinade for the last 5 minutes.
- Preheat the grill or BBQ to medium-high heat.
- Thread the marinated mushrooms, bell pepper, zucchini, and red onion onto the skewers, alternating between the vegetables.
- Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally, until the vegetables are tender and have grill marks.
- Remove from the grill and serve hot, garnished with fresh parsley if desired.
