- Eggplant - 200 grams
- Red onion - 100 grams
- Cherry tomatoes - 150 grams
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Garlic (minced) - 2 cloves
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
Steps
- Preheat the grill to medium-high heat.
- Wash and cut the zucchini, bell peppers, and eggplant into thick slices or chunks.
- Peel and slice the red onion into wedges.
- In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
- Add all the chopped vegetables and cherry tomatoes to the bowl and toss well to coat them in the marinade.
- Let the vegetables marinate for at least 15 minutes to absorb the flavors.
- Thread the marinated vegetables onto skewers, alternating between different types.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
