Ingredients

  • Zucchini - 200 grams
  • Bell peppers (mixed colors) - 200 grams
  • Eggplant - 200 grams
  • Red onion - 100 grams
  • Cherry tomatoes - 150 grams
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic (minced) - 2 cloves
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Preheat the grill to medium-high heat.
  2. Wash and cut the zucchini, bell peppers, and eggplant into thick slices or chunks.
  3. Peel and slice the red onion into wedges.
  4. In a large bowl, combine olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper.
  5. Add all the chopped vegetables and cherry tomatoes to the bowl and toss well to coat them in the marinade.
  6. Let the vegetables marinate for at least 15 minutes to absorb the flavors.
  7. Thread the marinated vegetables onto skewers, alternating between different types.
  8. Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the vegetables are tender and slightly charred.
  9. Remove the skewers from the grill and let them rest for a couple of minutes before serving.
