Mangal Köfte

Ingredients

  • Red lentils - 150 grams
  • Bulgar wheat (fine) - 50 grams
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Fresh parsley - 30 grams, chopped
  • Tomato paste - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Pita bread - 2 pieces, for serving
  • Grilled vegetables (zucchini, bell pepper, etc.) - for serving

Steps

  1. Rinse the red lentils under cold water until the water runs clear, then place them in a pot with 500 ml of water. Bring to a boil and cook for about 15 minutes or until soft.
  2. Once cooked, drain any excess water and allow the lentils to cool slightly.
  3. In a mixing bowl, combine the cooked lentils, bulgar wheat, chopped onion, minced garlic, chopped parsley, tomato paste, cumin, paprika, black pepper, and salt. Mix well until thoroughly combined.
  4. Shape the mixture into small patties, about 5 cm in diameter and 1 cm thick.
  5. Preheat your grill or BBQ to medium-high heat. Brush the patties lightly with olive oil.
  6. Grill the lentil patties for about 4-5 minutes on each side, or until they have a nice char and are heated through.
  7. Meanwhile, grill your choice of vegetables until tender and slightly charred.
  8. Serve the Mangal Köfte with pita bread, grilled vegetables, and a drizzle of lemon juice.
