  • Zucchini - 1, diced
  • Mushrooms - 100 grams, sliced
  • Cherry tomatoes - 150 grams, halved
  • Spinach - 100 grams
  • Dried oregano - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Lemon juice - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  3. Add the diced red bell pepper, zucchini, and sliced mushrooms to the skillet. Cook for about 5-7 minutes until they soften.
  4. Stir in the halved cherry tomatoes and spinach, cooking for an additional 3-4 minutes until the spinach wilts.
  5. Season the vegetable mixture with dried oregano, salt, and black pepper. Mix well.
  6. Add the cooked pasta to the skillet and toss everything together until well combined.
  7. Drizzle with lemon juice and garnish with fresh parsley before serving.
