- Whole wheat pasta - 200 grams

- Red bell pepper - 1, diced
- Zucchini - 1, diced
- Mushrooms - 100 grams, sliced
- Cherry tomatoes - 150 grams, halved
- Spinach - 100 grams
- Dried oregano - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Lemon juice - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Cook the whole wheat pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the diced red bell pepper, zucchini, and sliced mushrooms to the skillet. Cook for about 5-7 minutes until they soften.
- Stir in the halved cherry tomatoes and spinach, cooking for an additional 3-4 minutes until the spinach wilts.
- Season the vegetable mixture with dried oregano, salt, and black pepper. Mix well.
- Add the cooked pasta to the skillet and toss everything together until well combined.
- Drizzle with lemon juice and garnish with fresh parsley before serving.
