Ingredients

  • Pasta (fusilli or penne) - 150 grams
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Red onion - 1/2 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta is cooking, prepare the dressing by whisking together olive oil, lemon juice, garlic powder, salt, and black pepper in a small bowl.
  3. Once the pasta is cooked, drain it and rinse under cold water to cool it down. Let it drain completely.
  4. In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and fresh parsley.
  5. Pour the dressing over the pasta salad and toss gently to combine all the ingredients evenly.
