- Pasta (fusilli or penne) - 150 grams
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Red onion - 1/2 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Garlic powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente, usually about 8-10 minutes.
- While the pasta is cooking, prepare the dressing by whisking together olive oil, lemon juice, garlic powder, salt, and black pepper in a small bowl.
- Once the pasta is cooked, drain it and rinse under cold water to cool it down. Let it drain completely.
- In a large mixing bowl, combine the cooled pasta, cherry tomatoes, cucumber, red bell pepper, red onion, and fresh parsley.
- Pour the dressing over the pasta salad and toss gently to combine all the ingredients evenly.
