Ingredients

  • Pasta (orzo or small pasta) - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Tomato - 1 medium, chopped
  • Vegetable broth - 500 ml
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Paprika - 1 teaspoon
  • Parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the diced carrot and bell pepper, and sauté for another 5 minutes until they start to soften.
  5. Mix in the chopped tomato and cook for 2 minutes until the tomato starts to break down.
  6. Add the pasta to the pot and stir everything together for 1-2 minutes to coat the pasta in the vegetables and oil.
  7. Pour in the vegetable broth, and season with salt, black pepper, and paprika.
  8. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15-20 minutes or until the pasta is cooked and the liquid has been absorbed.
  9. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  10. Serve hot, garnished with chopped parsley.
