Ingredients

  • All-purpose flour - 200g
  • Warm water - 100ml
  • Olive oil - 1 tablespoon
  • Active dry yeast - 5g
  • Salt - 1/2 teaspoon
  • Sugar - 1 teaspoon
  • Bell pepper (diced) - 1 medium
  • Onion (finely chopped) - 1 medium
  • Zucchini (grated) - 100g
  • Garlic (minced) - 2 cloves
  • Canned diced tomatoes - 200g
  • Tomato paste - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh parsley (chopped) - 2 tablespoons

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. In a large mixing bowl, combine flour and salt. Make a well in the center, add the yeast mixture and olive oil. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover, and let it rise for 30 minutes.
  4. In the meantime, heat a tablespoon of olive oil in a skillet over medium heat. Add onion and garlic, sauté until translucent.
  5. Add bell pepper and zucchini to the skillet, cooking until softened, about 5 minutes.
  6. Stir in the canned tomatoes, tomato paste, oregano, black pepper, and cook for another 5-7 minutes until slightly thickened. Remove from heat and stir in parsley.
  7. Preheat the oven to 220°C (428°F).
  8. Once the dough has risen, divide it into two equal parts. Roll each part into an oval shape and place on a baking sheet lined with parchment paper.
  9. Spread the vegetable mixture evenly on the rolled dough, leaving a small border around the edges.
  10. Fold the edges of the dough over slightly to create a crust, then bake in the preheated oven for about 15-20 minutes until golden brown.
  11. Remove from the oven, let it cool slightly, and serve hot.
