Ingredients
- All-purpose flour - 200g
- Warm water - 100ml
- Olive oil - 1 tablespoon
- Active dry yeast - 5g
- Salt - 1/2 teaspoon
- Sugar - 1 teaspoon
- Bell pepper (diced) - 1 medium
- Onion (finely chopped) - 1 medium
- Zucchini (grated) - 100g
- Garlic (minced) - 2 cloves
- Canned diced tomatoes - 200g
- Tomato paste - 1 tablespoon
- Dried oregano - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Fresh parsley (chopped) - 2 tablespoons
Steps
- In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy.
- In a large mixing bowl, combine flour and salt. Make a well in the center, add the yeast mixture and olive oil. Mix until a dough forms.
- Knead the dough on a floured surface for about 5-7 minutes until smooth. Place it in a greased bowl, cover, and let it rise for 30 minutes.
- In the meantime, heat a tablespoon of olive oil in a skillet over medium heat. Add onion and garlic, sauté until translucent.
- Add bell pepper and zucchini to the skillet, cooking until softened, about 5 minutes.
- Stir in the canned tomatoes, tomato paste, oregano, black pepper, and cook for another 5-7 minutes until slightly thickened. Remove from heat and stir in parsley.
- Preheat the oven to 220°C (428°F).
- Once the dough has risen, divide it into two equal parts. Roll each part into an oval shape and place on a baking sheet lined with parchment paper.
- Spread the vegetable mixture evenly on the rolled dough, leaving a small border around the edges.
- Fold the edges of the dough over slightly to create a crust, then bake in the preheated oven for about 15-20 minutes until golden brown.
- Remove from the oven, let it cool slightly, and serve hot.
