  • Celery, diced - 1 stalk (about 50g)
  • Tomato paste - 2 tablespoons
  • Diced tomatoes (canned) - 400g
  • Vegetable broth - 750ml
  • Dried oregano - 1 teaspoon
  • Dried thyme - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Pasta (small shapes like orzo or ditalini) - 100g
  • Fresh parsley, chopped - 2 tablespoons for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic, diced carrot, and diced celery. Cook for another 5 minutes until the vegetables soften.
  3. Stir in the tomato paste, allowing it to cook for 2 minutes to enhance the flavor.
  4. Add the canned diced tomatoes (with their juice), vegetable broth, dried oregano, thyme, salt, and black pepper. Bring the mixture to a boil.
  5. Once boiling, reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
  6. Add the pasta and cook according to package instructions, typically around 8-10 minutes, until al dente.
  7. Taste and adjust seasoning if necessary. Once the pasta is cooked, remove from heat.
  8. Serve hot, garnished with fresh chopped parsley.
