- Tomato paste - 2 tablespoons
- Diced tomatoes (canned) - 400g
- Vegetable broth - 750ml
- Dried oregano - 1 teaspoon
- Dried thyme - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Pasta (small shapes like orzo or ditalini) - 100g
- Fresh parsley, chopped - 2 tablespoons for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced carrot, and diced celery. Cook for another 5 minutes until the vegetables soften.
- Stir in the tomato paste, allowing it to cook for 2 minutes to enhance the flavor.
- Add the canned diced tomatoes (with their juice), vegetable broth, dried oregano, thyme, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat and let it simmer for 10 minutes to allow the flavors to meld.
- Add the pasta and cook according to package instructions, typically around 8-10 minutes, until al dente.
- Taste and adjust seasoning if necessary. Once the pasta is cooked, remove from heat.
- Serve hot, garnished with fresh chopped parsley.
