Ingredients

  • Whole wheat spaghetti - 150 grams
  • Chicken breast - 200 grams, diced
  • Red bell pepper - 1 medium, diced
  • Zucchini - 1 medium, diced
  • Red onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. In a bowl, combine diced chicken breast, olive oil, lemon juice, dried oregano, salt, and black pepper. Mix well and let it marinate for at least 15 minutes.
  2. While the chicken is marinating, bring a pot of salted water to a boil and cook the whole wheat spaghetti according to package instructions until al dente. Drain and set aside.
  3. In a large skillet over medium heat, add a little olive oil and sauté the minced garlic and diced red onion until translucent.
  4. Add the marinated chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.

  6. Add the cooked spaghetti to the skillet, tossing everything together to combine. Cook for an additional 2-3 minutes to heat through.
