Ingredients

  • Pasta shells - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Bell pepper - 1 medium, diced
  • Zucchini - 1 medium, grated
  • Carrot - 1 medium, grated
  • Tomato paste - 2 tablespoons
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chickpeas - 100 grams, cooked and mashed
  • Fresh parsley - 2 tablespoons, chopped
  • Vegetable broth - 500 ml
  • Lemon juice - 1 tablespoon

Steps

  1. Cook the pasta shells in boiling salted water according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic, diced bell pepper, grated zucchini, and grated carrot to the skillet. Cook for an additional 5-7 minutes until the vegetables are softened.
  4. Stir in the tomato paste, dried oregano, salt, and black pepper. Mix well and cook for another 2 minutes.
  5. Remove the skillet from heat and let the mixture cool slightly. Fold in the mashed chickpeas and chopped parsley, and add lemon juice for extra flavor.
  6. Preheat your oven to 180°C (350°F).
  7. Stuff each cooked pasta shell with the vegetable and chickpea mixture, placing them in a baking dish as you go.
  8. Pour the vegetable broth over the stuffed pasta shells, covering them slightly.
  9. Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
  10. Remove the foil and bake for an additional 10 minutes until the tops are golden and slightly crispy. Serve hot.
