- Pasta shells - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Bell pepper - 1 medium, diced
- Zucchini - 1 medium, grated
- Carrot - 1 medium, grated
- Tomato paste - 2 tablespoons
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chickpeas - 100 grams, cooked and mashed
- Fresh parsley - 2 tablespoons, chopped
- Vegetable broth - 500 ml
- Lemon juice - 1 tablespoon
Steps
- Cook the pasta shells in boiling salted water according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic, diced bell pepper, grated zucchini, and grated carrot to the skillet. Cook for an additional 5-7 minutes until the vegetables are softened.
- Stir in the tomato paste, dried oregano, salt, and black pepper. Mix well and cook for another 2 minutes.
- Remove the skillet from heat and let the mixture cool slightly. Fold in the mashed chickpeas and chopped parsley, and add lemon juice for extra flavor.
- Preheat your oven to 180°C (350°F).
- Stuff each cooked pasta shell with the vegetable and chickpea mixture, placing them in a baking dish as you go.
- Pour the vegetable broth over the stuffed pasta shells, covering them slightly.
- Cover the baking dish with aluminum foil and bake in the preheated oven for 20 minutes.
- Remove the foil and bake for an additional 10 minutes until the tops are golden and slightly crispy. Serve hot.
