- Pasta sheets - 200 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Spinach - 150 grams, fresh or frozen
- Mushrooms - 100 grams, sliced
- Bell pepper - 1 medium, diced
- Tomato paste - 2 tablespoons
- Paprika - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Nutritional yeast - 2 tablespoons
- Vegan cheese (optional) - 50 grams, shredded
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 180°C (350°F).
- In a large pan, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
- Add the sliced mushrooms and diced bell pepper to the pan, cooking for about 5 minutes until softened.
- Stir in the spinach and cook until wilted, then add the tomato paste, paprika, salt, black pepper, and nutritional yeast, stirring well to combine.
- Remove the filling from heat and let it cool slightly. If using, mix in the vegan cheese and chopped parsley.
- Lay out the pasta sheets on a clean surface. Take one sheet and place a generous amount of the vegetable filling at one end, rolling it up tightly.
- Repeat with the remaining sheets and filling until all are rolled.
- Place the rolled böreks seam-side down on a baking tray lined with parchment paper. Brush the tops with a little olive oil.
- Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
- Allow to cool for a few minutes before serving. Enjoy your Makarna Böreği warm!
