Ingredients

  • Pasta sheets - 200 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Spinach - 150 grams, fresh or frozen
  • Mushrooms - 100 grams, sliced
  • Bell pepper - 1 medium, diced
  • Tomato paste - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutritional yeast - 2 tablespoons
  • Vegan cheese (optional) - 50 grams, shredded
  • Fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large pan, heat olive oil over medium heat and sauté the chopped onion and minced garlic until translucent.
  3. Add the sliced mushrooms and diced bell pepper to the pan, cooking for about 5 minutes until softened.
  4. Stir in the spinach and cook until wilted, then add the tomato paste, paprika, salt, black pepper, and nutritional yeast, stirring well to combine.
  5. Remove the filling from heat and let it cool slightly. If using, mix in the vegan cheese and chopped parsley.
  6. Lay out the pasta sheets on a clean surface. Take one sheet and place a generous amount of the vegetable filling at one end, rolling it up tightly.
  7. Repeat with the remaining sheets and filling until all are rolled.
  8. Place the rolled böreks seam-side down on a baking tray lined with parchment paper. Brush the tops with a little olive oil.
  9. Bake in the preheated oven for 25-30 minutes or until golden brown and crispy.
  10. Allow to cool for a few minutes before serving. Enjoy your Makarna Böreği warm!
