Ingredients
- Squid (cleaned and whole) - 2 medium-sized (about 300g)
- Cauliflower rice - 150g
- Olive oil - 2 tablespoons
- Onion (finely chopped) - 50g
- Garlic (minced) - 2 cloves
- Fresh parsley (chopped) - 2 tablespoons
- Fresh dill (chopped) - 1 tablespoon
- Lemon juice - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - to taste
- Paprika - 1 teaspoon
- Feta cheese (crumbled) - 50g
Steps
- Preheat the oven to 180°C (350°F).
- In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic to the skillet and cook for another minute until fragrant.
- Stir in the cauliflower rice, parsley, dill, lemon juice, salt, black pepper, and paprika. Cook for 5-7 minutes until the cauliflower is tender. Remove from heat and mix in the crumbled feta cheese.
- Stuff each cleaned squid with the cauliflower mixture, filling them about 3/4 full. Use toothpicks to secure the openings.
- In a baking dish, drizzle the remaining tablespoon of olive oil. Place the stuffed squid in the dish and season with additional salt and pepper if desired.
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes to slightly brown the tops.
