Ingredients

  • Squid (cleaned and whole) - 2 medium-sized (about 300g)
  • Cauliflower rice - 150g
  • Olive oil - 2 tablespoons
  • Onion (finely chopped) - 50g
  • Garlic (minced) - 2 cloves
  • Fresh parsley (chopped) - 2 tablespoons
  • Fresh dill (chopped) - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - to taste
  • Paprika - 1 teaspoon
  • Feta cheese (crumbled) - 50g

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic to the skillet and cook for another minute until fragrant.
  4. Stir in the cauliflower rice, parsley, dill, lemon juice, salt, black pepper, and paprika. Cook for 5-7 minutes until the cauliflower is tender. Remove from heat and mix in the crumbled feta cheese.
  5. Stuff each cleaned squid with the cauliflower mixture, filling them about 3/4 full. Use toothpicks to secure the openings.
  6. In a baking dish, drizzle the remaining tablespoon of olive oil. Place the stuffed squid in the dish and season with additional salt and pepper if desired.
  7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes to slightly brown the tops.
