Ingredients
- Squid ink pasta - 200 grams
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Red onion - 1 medium, diced
- Bell pepper - 1 medium, diced
- Cherry tomatoes - 200 grams, halved
- Fresh basil - 1/4 cup, chopped
- Oregano - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Lemon - 1, juiced
- Parmesan cheese - 30 grams, grated (optional)
Steps
- Cook the squid ink pasta according to package instructions until al dente, then drain and set aside.
- In a large skillet, heat the olive oil over medium heat and add the minced garlic and diced red onion. Sauté until the onion becomes translucent, about 4-5 minutes.
- Add the diced bell pepper to the skillet and continue to cook for another 3-4 minutes until softened.
- Stir in the halved cherry tomatoes, dried oregano, salt, and black pepper. Cook for approximately 5-6 minutes until the tomatoes are softened and the sauce thickens slightly.
- Add the cooked squid ink pasta to the skillet and toss to combine with the sauce. Cook for an additional 2-3 minutes until heated through.
- Remove from heat and stir in the chopped basil and lemon juice. Adjust seasoning if necessary.
- Serve hot, garnished with grated Parmesan cheese if desired.
