Ingredients

  • Squid ink pasta - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Red onion - 1 medium, diced
  • Bell pepper - 1 medium, diced
  • Cherry tomatoes - 200 grams, halved
  • Fresh basil - 1/4 cup, chopped
  • Oregano - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Lemon - 1, juiced
  • Parmesan cheese - 30 grams, grated (optional)

Steps

  1. Cook the squid ink pasta according to package instructions until al dente, then drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat and add the minced garlic and diced red onion. Sauté until the onion becomes translucent, about 4-5 minutes.
  3. Add the diced bell pepper to the skillet and continue to cook for another 3-4 minutes until softened.
  4. Stir in the halved cherry tomatoes, dried oregano, salt, and black pepper. Cook for approximately 5-6 minutes until the tomatoes are softened and the sauce thickens slightly.
  5. Add the cooked squid ink pasta to the skillet and toss to combine with the sauce. Cook for an additional 2-3 minutes until heated through.
  6. Remove from heat and stir in the chopped basil and lemon juice. Adjust seasoning if necessary.
  7. Serve hot, garnished with grated Parmesan cheese if desired.
