Ingredients

  • Unsalted butter - 30 grams
  • Cornmeal (fine) - 50 grams
  • Water - 200 ml
  • Milk - 100 ml
  • Aged sheep's cheese (or similar) - 100 grams, crumbled
  • Black pepper - to taste
  • Red pepper flakes - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium saucepan, melt the unsalted butter over medium heat.
  2. Once melted, add the cornmeal and stir continuously for about 2 minutes until lightly toasted.
  3. Gradually add the water while stirring to avoid lumps, followed by the milk. Continue to stir until the mixture thickens, about 5 minutes.
  4. Reduce the heat to low and add the crumbled cheese, stirring until melted and creamy.
  5. Season with black pepper and red pepper flakes according to your taste.
  6. Remove from heat and transfer to a serving dish. Garnish with fresh parsley and serve immediately with crusty bread.
