- Zucchini - 300 grams

- Garlic - 1 clove, minced
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 4 tablespoons (for frying)
Steps
- Grate the zucchini using a box grater or food processor and place it in a clean kitchen towel. Squeeze out excess moisture and set aside.
- In a mixing bowl, combine the grated zucchini, flour, egg, crumbled feta cheese, chopped dill, chopped parsley, minced garlic, baking powder, salt, and black pepper. Mix well until all ingredients are thoroughly combined.
- Heat the olive oil in a non-stick skillet over medium heat.
- Scoop tablespoons of the zucchini mixture into the hot skillet, flattening them slightly with the back of the spoon to form fritters.
- Cook for about 3-4 minutes on each side or until golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Once cooked, transfer the fritters to a plate lined with paper towels to drain excess oil.
- Serve warm, garnished with additional herbs or a dollop of yogurt if desired.
