Ingredients

  • Zucchini - 300 grams
  • Carrot - 100 grams
  • Green onion - 2 stalks
  • Egg - 1 large
  • Feta cheese - 100 grams, crumbled
  • Chickpea flour - 50 grams
  • Fresh dill - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons (for frying)
  • Mixed salad greens - 150 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 small, diced
  • Lemon juice - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon

Steps

  1. Grate the zucchini and carrot using a box grater and place them in a large mixing bowl. Sprinkle with 1/2 teaspoon of salt and let them sit for 10 minutes to draw out excess moisture.
  2. After 10 minutes, squeeze the grated vegetables in a clean cloth or paper towel to remove the moisture, then return them to the bowl.
  3. Chop the green onions and dill, and add them to the bowl along with the crumbled feta cheese, egg, chickpea flour, black pepper, and remaining salt. Mix well until all ingredients are combined.
  4. Heat 2 tablespoons of olive oil in a non-stick skillet over medium heat. Spoon about 2 tablespoons of the mixture into the pan for each fritter, flattening them slightly. Cook for 3-4 minutes on each side until golden brown. Repeat with the remaining mixture, adding more oil as needed.
  5. While the fritters are cooking, prepare the salad by combining mixed greens, cherry tomatoes, and cucumber in a serving bowl. Drizzle with lemon juice and toss gently.
  6. Once the fritters are ready, place them on a paper towel to absorb excess oil. Serve the fritters warm on top of the salad.
