Ingredients

  • Zucchini - 200 grams
  • Carrot - 50 grams
  • Egg - 1 large
  • All-purpose flour - 50 grams
  • Feta cheese - 50 grams, crumbled
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons, for frying
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Cucumber - 1/2, sliced

Steps

  1. Grate the zucchini and carrot using a box grater or food processor, and place them in a clean kitchen towel to squeeze out excess moisture.
  2. In a mixing bowl, combine the grated zucchini and carrot with the egg, flour, crumbled feta, dill, parsley, minced garlic, salt, and black pepper. Mix until well combined.
  3. Heat olive oil in a non-stick skillet over medium heat. Once hot, scoop about 2 tablespoons of the mixture for each fritter and flatten slightly in the pan.
  4. Fry the fritters for about 3-4 minutes on each side or until golden brown. Once cooked, transfer them to a paper towel to drain any excess oil.
  5. Toast the whole wheat burger buns in the same skillet for 1-2 minutes until lightly browned.
  6. Assemble the Mücver Burgers by placing a fritter on each bun, topping with lettuce, tomato, and cucumber slices. Close the buns and serve immediately.
