- Zucchini - 200 grams
- Carrot - 50 grams
- All-purpose flour - 50 grams
- Chickpea flour - 30 grams
- Fresh dill - 2 tablespoons, chopped
- Fresh parsley - 2 tablespoons, chopped
- Garlic - 1 clove, minced
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Turmeric - 1/4 teaspoon
- Baking powder - 1/2 teaspoon
- Water - 3 tablespoons
- Olive oil - for frying
Steps
- Grate the zucchini and carrot using a grater and place them in a bowl.
- Add the chopped dill, parsley, minced garlic, salt, black pepper, turmeric, and baking powder to the bowl with the grated vegetables.
- In a separate bowl, mix the all-purpose flour and chickpea flour. Gradually add this mixture to the vegetable mixture, stirring well.
- Add water to the mixture to achieve a thick batter consistency, and mix until well combined.
- Heat olive oil in a frying pan over medium heat. Once hot, drop spoonfuls of the batter into the pan, flattening them slightly.
- Fry each fritter for about 3-4 minutes on each side, or until golden brown and crispy.
- Remove the fritters from the pan and place them on paper towels to absorb excess oil.
- Serve warm with a side of vegan yogurt or a fresh salad.
