Ingredients

  • Zucchini - 200 grams
  • Carrot - 50 grams
  • All-purpose flour - 50 grams
  • Chickpea flour - 30 grams
  • Fresh dill - 2 tablespoons, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Garlic - 1 clove, minced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Turmeric - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Water - 3 tablespoons
  • Olive oil - for frying

Steps

  1. Grate the zucchini and carrot using a grater and place them in a bowl.
  2. Add the chopped dill, parsley, minced garlic, salt, black pepper, turmeric, and baking powder to the bowl with the grated vegetables.
  3. In a separate bowl, mix the all-purpose flour and chickpea flour. Gradually add this mixture to the vegetable mixture, stirring well.
  4. Add water to the mixture to achieve a thick batter consistency, and mix until well combined.
  5. Heat olive oil in a frying pan over medium heat. Once hot, drop spoonfuls of the batter into the pan, flattening them slightly.
  6. Fry each fritter for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove the fritters from the pan and place them on paper towels to absorb excess oil.
  8. Serve warm with a side of vegan yogurt or a fresh salad.
